Black Russian Cake

Serves 16 to 20

Ingredients:

• Yellow Cake Mix (Super Moist type)
• 1.4 oz Sugar Free Instant Chocolate Fudge Pudding Mix*
• ¼ Cup Splenda Sugar Blend (Not Splenda Granulated)*
• 1 Cup Wesson Oil
• 4 Eggs
• ¼ Cup Vodka
• ¼ Cup Kahlua
• ¾ Cup Water
• Pam Spray

Glaze:

• 1/3 Cup Kahlua
• 2/3 Cup Powdered Sugar

Directions:
Spray bundt pan with Pam Spray. Preheat oven to 350 degrees. Place all dry ingredients in a large bowl. Add all liquid ingredients at one time and beat for 4 minutes. Pour mixture into bundt pan. Bake for 45 to 50 minutes. Cool cake for 10 minutes and then invert onto serving plate. Poke holes in top and sides of cake with toothpicks so glaze will soak in. Apply glaze to entire cake surface with a pastry brush and dust cake with powdered sugar.

* Original recipe called for:

• 6 oz Box Instant Chocolate Pudding Mix
• ½ Cup Sugar

The original recipe was one ‘floating around’ the office 18 - 20 years ago that had been cut from a magazine. I do not have the name of the magazine nor of the original author.
