Grasshopper Brownies

Mint Ganache

Directions:

  1. Bring the cream to a simmer
  2. Pour over the white chocolate and let stand covered for 1 min
  3. Emulsify the chocolate
  4. Stir in the crème de menthe and peppermint extract
  5. Chill, covered, stirring occasionally, until thick ~1 hr

Chocolate Ganache:

Directions:

  1. Bring the cream to a simmer
  2. Pour over the chocolate and let stand covered for 1 min
  3. Emulsify the chocolate
  4. Chill, covered, stirring occasionally, until thick ~30 mins

Assembly:

  1. Prepare brownies as normal, baking in an 8x8 pan (if using 9x13, double ganache recipes)
  2. Cool brownies completely ~1hr
  3. Spread the mint ganache over the brownies in a thin layer
  4. Chill until firm but still sticky, ~30 mins
  5. Spread chocolate ganache over mint
  6. Chill until firm ~2hrs
