Grasshopper Brownies

- Favorite Brownie Mix
- Mint Ganache
- Chocolate Ganache
Mint Ganache
- ¼ cup heavy cream
- 5oz white chocolate
- 2tbl green crème de menthe
- 1tea peppermint extract
Directions:
- Bring the cream to a simmer
- Pour over the white chocolate and let stand covered for 1 min
- Emulsify the chocolate
- Stir in the crème de menthe and peppermint extract
- Chill, covered, stirring occasionally, until thick ~1 hr
Chocolate Ganache:
- ½ cup heavy cream
- 5oz bittersweet chocolate
Directions:
- Bring the cream to a simmer
- Pour over the chocolate and let stand covered for 1 min
- Emulsify the chocolate
- Chill, covered, stirring occasionally, until thick ~30 mins
Assembly:
- Prepare brownies as normal, baking in an 8x8 pan (if using 9x13, double ganache recipes)
- Cool brownies completely ~1hr
- Spread the mint ganache over the brownies in a thin layer
- Chill until firm but still sticky, ~30 mins
- Spread chocolate ganache over mint
- Chill until firm ~2hrs
