CPB & J Sandwiches

Brownie recipe from Great American Bake Sale Cookbook

Brownie Ingredients:
1 1/2 cup sugar
4 tsp. Triple Sec
6 eggs slightly beaten
1 1/2 cup flour
1 cup cocoa
1 tsp. baking powder
1 tsp. Salt

Brownie Directions:

  1. Cream butter, sugar and triple sec in a bowl. Beat in eggs.
  2. In another bowl, mix flour, cocoa, baking powder, and salt with a fork.
  3. Mix dry and wet mixture.
  4. Spread butter in a pan and bake for 40 to 45 minutes at 350 degrees F.

Jam Ingredients:
12 oz. raspberries
1 cup pomegranate-raspberry juice (100% Juice)
1 cup sugar
1 oz. of Pectin (I used Sure Jell)

Jam Directions:

  1. Mix everything in a suace pan and bring to a boil.
  2. Once boiling, cook for two minutes and remove from heat.

Final Product:
Cool brownies and cut in half horizontally. Add jam and peanut butter and put together (like a sandwich) and you have some CPB&J brownie sandwiches.
