Midnight Persian Delight

Simple Syrup Ingredients:
4 Tablespoons honey
2 Tablespoons water
1/2 cinnamon stick
6 cardamom seeds

Chocolate Bark Ingredients:
7 oz good semisweet chocolate
7 oz good bittersweet chocolate
1 cup shelled pistachios, roasted and salted
1 cup toasted coconut flakes
3/4 cup pomegranate arils (seeds)

Steps:
To make simple syrup: Combine ingredients in saucepan and heat over low for 15 minutes. Strain into a bowl or cup for drizzling over bark.

To make chocolate bark: Heat chocolate in a glass bowl in microwave at 20-30 second intervals on high power, stirring frequently until smooth and melted.

Pour onto parchment paper and spread into approximately 9x10 inch rectangle. Spring pistachios and pomegranate arils over top. Drizzle 2 to 3 Tablespoons of simple syrup over top. Sprinke coconut flakes over top and press lightly into chocolate.

Allow bark to firm up in fridge or at room temperature for 1 to 2 hours.
